Does good stainless steel (interior) cookware acquire marks?
I bought a fairly expensive saucepan – one of the thick copper-coated French ones with the stainless steel interior. I don’t use extra-high heat on it, and I’ve always cleaned it with a non-scratch sponge. I also hand dry it immediately after washing.
After a few uses, however, the interior is developing some “marks.” They’re not scratches – they look more like water stains – they’re iridescent and they’re concentrated in a ring about 1″ off the above of the pan. Is this common? Does it affect the performance?

If your pan has a stainless steel interior, why are you using a non-scratch sponge on it? I’ve had my stainless steel cookware for several years and I scrub the hell out of it with a Brillo pad, put it in the dishwasher, and it’s beautiful to this day!
